Tedeschi is a Valpolicella pioneer dating back to 1630, though the winery was established in 1824. Annual production is now nearly 500.000 bottles...Only 5.000 bottles of Recioto are produced each year.
"Besides the fact it's gone out of fashion . Recioto costs about 20 percent more to make" explains marketing manager Sabrina Tedeschi. "Yealds are lower because the grapes are left to dry for an extra month, which means you get less juice, more manpower is required, etcetera." Renzo, the father, and Riccardo, the son and the oenologist, oversee production of the dozen Tedeschi wines.

CAPITEL DEI NICALO' 2007 VALPOLICELLA DOC CLASSICO SUPERIORE
Capitel was produced using the appassimento method, in which grapes are left to dry on racks for a month. The slow dehydration yields a wine that's more concentrated than the classic Valpolicella but less concentrated than if the ripasso technique were used. Capitel would go well with slow-cooked or grilled dishes
