Garganega grapes are harvested by hand at the start of October. The must, after brief contact with the skins, ferments at 18-20°C in steel tanks. Alcoholic fermentation lasts about 6 days. The wine remains in the steel tanks to undergo malolactic fermentation as well. It is stored in the steel containers up until it is bottled.
