Winemaking technique
Grapes are harvested by hand half-way through October (Garganega gives best results when it is a bit overripe). The must, after a short period of contact with the skins, ferments for one week in steel at a temperature of 18-20°C. Then it remains in steel for another 5 months before it is bottled. The wine undergoes malolactic fermentation during this period.
